Sometimes when something comes out good you think that it can never happen again. And then you realize that fate is conspiring to force you to do it again.
A couple of weeks ago I made a dulce de leche cheesecake. From scratch, despite the utter insanity in doing so. I stirred milk for hours, which as it turns out was probably at least an hour longer that it needed. And then, despite my best efforts it went into the oven looking like a lumpy mess. It came out of the oven, and had to promptly go back in because it was not even close to being done. The next time it was done. When it was finally chilled I looked at it, and it still looked like a mess, with irregularly shaped pock marks covering the top. But it tasted good, and a couple of days later it was all gone.
But there was still the other half of the dulce de leche in the fridge, calling to me. And so I made another cheesecake.
